| From 25 year old vines, this pinot noir is matured half in large oak cask (for mellowness) and half in stainless vats (for bright freshness). The result is well ballanced with an aroma of cherry, blackberries and wild strawberries and a Burgundian signature of bright acidity and mineral notes. |
| 2007 Manuel Olivier, Bourgogne Hautes-Cotes du Nuits $20 |
| One of a new generation of winemakers of Bourgogne, Manuel Olivier started his vineyards in 1990. Like Bichot, Olivier splits the maturation of the wine, half matured in stainless steel vats to retain fruits, with the other half in oak barrels to fix tannins and give structure and harmony. The Hautes-Cotes has an intense bouquet with dark and earthy notes followed by full dark fruit and complex tannins. |

94% Merlot, 6% Cabernet Sauvignon Estelle and Jean-Louis Roumage of Chateau Lestrille sustainably farm their vineyards and use traditional winemaking techniques (like aging the wine in large oak vats) to highlight the flavor of the grapes. The wine shows full ripe cherry fruit with notes of tabacco and leather, smooth and full-bodied on the palate and well-integrated tannins. |

| 100 % Merlot Chateau Bellevue is a side project of Olivier Decelle of Chateau Jean-Faure, made under the supervision of Michel Rolland.From a vineyard overlooking the Gironde from the 80 meters high plateau at Saint Michel de Fronsac, the wine offers a fruit forward style from a classic, well-tempered vintage. It is ready to drink now or can be put down for few years. |

| 60% Cabernet Sauvignon, 40% Merlot This vineyard founded in 1840 is now operated by Philippe Berard, a dynamic and passionate vine grower. The grapes for the Cabans come from 35 year old vines grown on limestone-clay soils aged in 25% new oak and 75% neutral barrels. The wine has aromas of minerals, leather, black tea, and ripe currents and cherries. The palate has supple tannins with dark fruit, licorice and a full finish. |
