Seven Hills
Established in 1988, Seven Hills Winery is one of the early Walla Walla wineries that made Walla Walla wine so sought after. These days when new Washington wineries are as thick as fleas on a dog (one new winery a week, yikes!), it is good to remember that these guys are still there making the same great wine they have always made. Seven Hills wines are known for good solid wine with a balance of fruit, acidity and tannins. Their reds are both delicious upon release and just get better with cellar age. Whether you have never tried them or you are an old fan, come join us Saturday and taste the latest releases from this stalwart Washington winery. The line up will be:

2006 Riesling, Columbia Valley $11
This is a graceful, balanced Riesling that was fermented at a cool temperature to maximize aroma and flavor. It has abundant ripe apple, citrus and floral notes, with undercurrents of vanilla and minerals with a clean crisp finish. And, unlike many domestic Riesling the Seven Hills picks up even more complexity with a couple years of cellaring.

2006 Viognier, Columbia Valley $17
From Milbrant vineyards on the Wahluke Slope, The Seven Hills Viognier is barrel fermented in French oak. It has orange peel, pine and peach aromas accented with spicy toasty notes that blend into flavors of honey, orange and peach.
2004 Planing Mill Red, Oregon, $15
A blend of Merlot, Cabernet Franc, and Cabernet Sauvignon, the Planning Mill has soft tannins and very broad, full flavor. Cabernet Franc adds softness and complexity, and a light note of violets. Merlot fills out the middle palate, with Cabernet Sauvignon lending firmness. These ripe fruit characters are surrounded by oak tones of spice and vanilla from 17 months spent in a mix of American and European barrels. This is an accessible, enjoyable wine.

2003 Cabernet Sauvignon, Seven Hills Vinyard $30
Cabernet Sauvignon 89%, Cabernet Franc 7%, Merlot 4%. From their famous Northwest vineyard, this complex, layered Cabernet shows the depth of flavor that old vines can offer. Rich red plum and blackberry are complemented by cocoa and licorice notes with hints of vanilla and pepper. The wine has moderate acidity, an approachable texture, and a pleasing, lengthy warm finish. For those of you who keep score, Wine Spectator gave it 92 Points.

2004 Ciel du Cheval, Red Mountain $31
32% Cabernet Sauvignon, 29% Merlot, 26% Cabernet Franc, 13% Petit Verdot, from the renowned Ciel du Cheval Vineyard. The wine shows soft red plum, pie cherry, rhubarb and pungent, sweet spices in the nose. The palate is of red fruits over moderate structure, a little tight, but with subdued tannins. The wine tastes wonderful now, but will improve with several years of age.
